			<content:encoded><![CDATA[<p>For anyone who has tried to lose weight during the summer, I&#8217;m here to tell you that it&#8217;s really not as easy as some make it out to be. Yes, the summer weather provides the chance to be active outside and not to mention all of the tasty in season fruit and veggies (peaches anyone?!), but it seems that the strawberry margaritas, mom&#8217;s cabin cooking and weekend camping trips can wreak havoc on a persons diet. I am living proof of that, in the last 2 months I have lost and gained the same two pounds so many times my fat&#8217;s starting to have deja-vu. I feel so frustrated at times, starting down at the scale after a great week of eating healthy and working my butt off in the gym, yet my body seems to be holding onto my weight the same way I used to clutch the last bite of a mars bar, as if I didn&#8217;t get the bite in&#8230; I would die of starvation.</p>
<p>Well after six weeks of stressing over this &#8220;number&#8221; on the scale, I decided the heck with it! I&#8217;m a strong confident woman, who has shed forty-two pounds off her 5&#8217;4 frame and I&#8217;ll be damned if a number on a scale is going to cause this gal another sleepless night. I refuse to let a piece of plastic with a number dial depict my mood for the week. I&#8217;ve started to realize tiny changes in my body that a number on a scale can&#8217;t show, like the definition in my arms and shoulders, the flat tummy that&#8217;s starting to appear, my strong lean legs and the lack of jiggle in my hiney.</p>
<p>I&#8217;ll never be a size 2&#8230; but this weight loss journey I have taken has brought me to a place where I can finally accept all 152 pounds of me and love my body for what it is and what it has done for me.</p>

			<content:encoded><![CDATA[<p>So  it&#8217;s about this time of year I&#8217;ve grown a ton of zucchini&#8217;s but have  run out of ideas what to do with them. I came across this recipe and  thought I would give it a try!</p>
<p>This low point recipe serves one, makes 4 big zuchinicakes.</p>
<p>You&#8217;ll need</p>
<p>1.5 cups shredded zucchini (squeeze as much liquid as you can out of it)<br />
1 small shredded potato (I used my garden potatoes, about 1/2 cup or so)<br />
1/8 cup minced onion<br />
1 whole egg (2 egg whites would work too)<br />
1 tbsp whole wheat flour</p>
<p>dill (fresh from the garden is best)<br />
salt<br />
garlic powder<br />
fresh ground pepper to taste</p>
<p style="text-align:left;">2tsp olive oil for frying</p>
<p>Mix  zucchini and potato together, squeeze as much liquid out as possible,  this will keep them crisp while they cook. Add onion, egg, flour and  spices. Mix well. Heat 2 tsp olive oil in large frying pan, drop the  mixture into the pan, making roughly 4 pancakes, or heck make 8 mini&#8217;s!  Let them fry for roughly 5 minutes per side. Cool and serve!</p>
<p>These makes a tasty light lunch, and are only six weight watchers points for the whole recipe! <p>You&#8217;ll Need:</p>
<p>8 Roma tomatoes halved and seeded<br />
2 red peppers, quartered and seeded<br />
1 medium onion, quartered<br />
8 cloves garlic<br />
2 teaspoons dried thyme<br />
4 tablespoons olive oil, divided<br />
2 tablespoons balsamic vinegar<br />
salt and freshly ground black pepper<br />
1 (6-ounce) can tomato paste<br />
1 container vegetable stock</p>
<p>Preheat the oven to 400 degrees F. On a sheet pan, gently toss together the tomatoes, peppers, onion, garlic, thyme, 2 tablespoons olive oil, vinegar,<br />
and salt and pepper to taste &#8211; roast until lightly charred for 45 minutes at 400 degrees.</p>
<p>In a soup pot, warm the remaining 2 tablespoons of the olive oil over medium-high heat. Stir in the tomato paste and mix well. Add the<br />
tomato and pepper mixture, including the juices, and combine. Stir in the stock, cover, and bring to a boil.</p>
<p>Reduce the heat to low and simmer for 10 minutes. Transfer the soup to a blender (I used my magic bullet) and pulse in small batches<br />
that reach only about a third to halfway  up the side of the jar. Use a separate bowl to hold the blended soup  and then return it all to the pot, simmer another 20 minutes and serve!</p>
<p><em>Note:  Let the soup cool for at least 5 minutes before blending and fill  blender no more than halfway. Release one corner of the blender lid,  this prevents the vacuum effect that creates heat explosions. If you&#8217;re  using the magic bullet like I did, don&#8217;t screw the lid on super tight or  you&#8217;ll have a heck of time getting it off!</em></p>

			<content:encoded><![CDATA[<p><a href="http://msmann.files.wordpress.com/2010/07/fortune_cookie_zen.jpg"><img class="aligncenter size-medium wp-image-370" title="fortune_cookie_zen" src="http://msmann.files.wordpress.com/2010/07/fortune_cookie_zen.jpg?w=300&#038;h=225" alt="" width="300" height="225" /></a>So I&#8217;m a bit of a die hard for Chinese  food, but I&#8217;ve come up with this tasty sweet and sour meatball recipe to kick my take-out urges!</p>
<p>You&#8217;ll  need:</p>
<p>1 lb of extra lean ground turkey<br />
1 can pineapple  tidbits (keep the juice)<br />
1/3 cup crushed crackers (breadcrumbs of any  kind work!)<br />
1/3 cup egg whites<br />
1/3 cup brown sugar<br />
1/3 cup  vinegar<br />
1/4 cup soy sauce<br />
cornstarch<br />
2 garlic cloves minced<br />
1  medium onion minced<br />
salt and pepper to taste</p>
<p>Mix turkey,  breadcrumbs, egg whites, garlic, onion and salt and pepper in large bowl  &#8211; mix well and form small balls about 1 inch round or so (if you find  the meat a little too sticky just add more crackers). Bake on &#8220;pamed&#8221;  cookie sheet at 375 for 30 minutes or so.</p>
<p>While you wait&#8230; in a  small saucepan add can of pineapple. Mix brown sugar, soy sauce and  vinegar together in small bowl, add a heaping tbsp or so of cornstarch  and mix until all the clumps dissolve, then add this mixture to the  saucepan and bring all ingredients to a slow bowl until thickened. Once  meatballs are done, add to sauce and let them simmer in the sauce for 20  minutes or so.</p>
<p>I love to serve this with brown rice and either  peas or steamed broccoli.</p>
<p>Makes roughly 4-6 servings depending on  how big/small you make your meatballs.<br />

<p>Note:  depending what I have on hand I sometimes like to add green peppers,  carrots or snap peas for fiber and taste!</p>

<p>I bought &#8220;Veganique&#8221; online, which is a vegan protein.  I&#8217;m not a<br />
vegan, it&#8217;s just lower points (I follow weight watchers system)<br />
and has many added benefits  such as high antioxidants, lots of<br />
fiber, minerals, etc. So in other  words it<br />
replaces my multivitamin.</p>
<p>I usually mix 1 scoop of  the powder (120 cal/3 fat/9 fiber) with 1/2<br />
cup vanilla yogurt,  crushed ice and a splash of orange juice, water or<br />
milk and blend it  in my magic bullet. I&#8217;ve also added any frozen fruit I<br />
have on  hand, bananas, strawberries, blueberries, whatever you like!</p>
<p>Veganique  makes a chocolate, natural and berry flavor(I have the<br />
berry!). The  days when I workout and have a smoothie, I find my appetite<br />
is  curbed for the whole day. Despite what people may think, a protein<br />
shake  can actually fill a person up and leave you feeling really<br />
satisfied!</p>

			<content:encoded><![CDATA[<p>January of this year, enough was enough;  only twenty two years old and I was at the heaviest weight I had ever been. I embarked on a journey to seek strength and health. Seven months later I am down 42 pounds and 32 inches! I won&#8217;t say that my weight loss didn&#8217;t come with its share of struggles and defeats because it most definitely did! But at the end of the day I always hopped back on the wagon and kept inching on <em>(even when I&#8217;d rather be tucked warm in my bed at 6am instead of doing my boot camp work outs).</em> I want to inspire and encourage anyone and everyone who has struggled with their weight, because I&#8217;ve lived it and I was thankful to have great family and friend support during this journey.</p>
<p>My goal for this blog is to share tools, tricks are recipes that have helped me along the way, here are a few of my favorites to get ya warmed up!</p>
